It's lunchtime again, y'all.
Or do you call it dinnertime? My relatives in Mississippi would call it that, but they wouldn't touch the lunch I made for myself.

So what did I make????
A pimiento cheese sandwich with leftover lentil salad graced my plate this afternoon. I made the sandwich on whole wheat bread.
(You aren't supposed to do that.)
(But I'm a rule breaker folks.)

Admittedly, the sandwich MIGHT have been tastier on honey wheat bread (Newman's own, my Daddy Bob's favorite by the way) or some wonderbread probably.
But y'all. That pimiento cheese sandwich was good. The cheese spread was good. Good enough to eat on 100% whole wheat bread.
(With seeds in it and everything.)

MmMm. It sure pleasured my taste buds, and the lentil salad was even better than last night. A night in the fridge with time for all the flavors to meld, as well as eating it cold, did it a lot of good. Ingredient | Calories | Fat (g) | Carbs (g) | Protein (g) |

Ingredients:::
- 4 cups finely shredded sharp cheddar cheese
- 1/2 cup nonfat, unsweetened plain Greek yogurt (I buy big tubs of Kroger brand)
- 2 tablespoons mayonnaise
- 4 oz diced pimiento peppers (they sell little jars of these with all the other canned vegetables, I always find them on the top shelf.. you could buy a 2 oz jar if you want less peppers, but you don't...)
- black pepper, garlic powder, chili powder, and paprika to your tastes (I used about 1/2 tsp of each)
All you do is mix the above ingredients around in a bowl with a spoon until they're nice and combined! Refrigerate the whole thing at least 30 minutes before you eat it, ideally so all the flavors set in.
